Smoky Vegan Sweet Potato Tacos

These quick and healthful tacos are a stress-free, plant-forward weekday supper.

Smoky, roasted sweet potatoes and avocado make up the stuffing for these simple tacos from the Plantifully Lean cookbook. A couple dollops of cashew cheese, guacamole, and chopped cilantro wouldn't hurt, too.

2 large sweet potatoes, cut into 1-inch cubes Juice of 1⁄2 lime 1⁄2 teaspoon smoked paprika 1⁄2 teaspoon garlic salt

What you need

1⁄4 teaspoon chili powder 1⁄4 teaspoon onion powder 6 (8-inch) corn tortillas, warmed 1 cup black bean salsa  1⁄2 small avocado, sliced

Set the oven's temperature to 425. Use parchment paper to line a baking sheet.

What you carry out

Place sweet potatoes on a baking pan that has been prepped. Lime juice should be added, along with paprika, onion powder, garlic salt, and chili powder for seasoning.

After tossing to coat, roast the potatoes for 30 to 40 minutes, or until they are soft and starting to brown.

To serve, spoon potatoes onto tortillas, then top with avocado and salsa.
