Vegan Toffee Cake with Sticky Toffee

If you're going to stay indoors all winter, you might as well eat some delicious vegan sweets.

You know who like sticky toffee cake? Everyone, but notably Madonna. At least that is what we have heard. These delectable cookies are particularly popular at the Veganuary headquarters, which is why we're sharing this recipe for the most cruelty-free Christmas season ever.

1½ cups dates, pitted 1 cup vegan milk ½ cup water 1 teaspoon baking powder ¾ cup vegan butter

What you require

¾ cup light brown sugar 1½ cups white self-rising flour ⅛ teaspoon ground nutmeg ½ teaspoon ground ginger ½ teaspoon ground cinnamon 6 walnut halves, for garnish

¾ cup corn syrup 1 cup vegan butter 1 ½ cups brown sugar 1 teaspoon vanilla extract ½ cup soy creamer

For the cake, cut the dates into quarters and place them in a small pot with milk and water. Cook until soft. Remove from heat and toss in the baking powder, which will froth as it is added to the date mixture.

What you carry out:

Allow to cool for approximately 15 minutes. Preheat the oven to 375 degrees. Grease and line an 8-by-8-inch shallow cake pan with parchment paper.

Combine butter and sugar until smooth. Add the date mixture and stir. Mix the spices into the sieved flour.
